Puntarelle with Anchovies (Puntarelle con Le Alici)
Instructions
Wash the chicory (bitter chicory tips) with a small knife, discarding the green leaves and the hardest parts.
Put them in cold water and let set for at least half an hour.
Drain, dry and mix in a salad bowl, where you will have prepared a mashing the anchovy sauce, the cloves of garlic, a bit of vinegar, olive oil extra virgin olive oil, salt and pepper.
Let them sit for at least 15 minutes.
Stir and serve.

- 1000 g of puntarelle
- 2 cloves of garlic
- 4 anchovies
- Little of wine vinegar
- Olive oil extra virgin
- Salt
