Clean the leeks and discard tough green portion only.
Cut the remaining slices, place it in a saucepan with the butter and saute over low heat.
Combine the milk and Cook 20 minutes, stirring often, until the liquid is absorbed and the leeks are very soft.
Salt and spice with the grated lemon rind, nutmeg and pepper.
Cook pasta al dente and dress with the sauce for leeks and grated grana.
