Avocado sauce
Instructions
Choose an avocado well ripe, split it in half, remove the core and with a spoon, gently remove the pulp, collected in a bowl and mash well with a ladle or shake it.
In a bowl put the yolk, knock it with salt, pepper and mustard, then begin to pour flush with oil.
When the mixture is well fitted as you add the avocado flesh and a few drops of lemon juice.
Taste, adjust salt and pepper if necessary.
Serve with boiled eggs.
