Grilled Sardines (Sardine Grigliate)
Instructions
Prepare a brunoise with pepper already cleaned, put it in a bowl with the herbs, garlic and olive oil, stir and leave to marinate for 30 minutes.
Clean the fish, eliminatene the fins except the tail, then evisceratelo.
To make a slit in the abdomen using a pair of small scissors.
Rinse the sardines under a light spray of cold water and dry with some paper towels.
Place them in a dish, cover with the marinade and let stand for 1 hour.
Add salt and pepper and cook sardines on the grill at 15 cm from the embers, for 2-3 minutes on each side.
Serve warm with a cold sauce to taste.

- 1/2 red pepper
- 2 tablespoons of parsley, sage and rosemary, chopped
- 1 clove of garlic
- 12 tablespoons of olive oil
- 16 sardines (80 g each)
