Instructions

Grate the carrots and chopped almonds.

In a bowl beat the egg yolks with 30 g of honey, making them very foamy.

Add yolks mounted carrots and almonds, add the grated Orange Zest (yellow part only), yeast and stir mixing well.

Whip the egg whites until very firm snow (by adding a pinch of salt).

Blend the mixture stirring gently so that they remain well swollen.

Pour the mixture into a lightly greased Cake Pan and bake at 200 degrees oven for 35 minutes.

Let cool then coat the cake with 10 g of honey and garnish with half orange slices.

Prepare the sauce by mixing yoghurt with half orange juice, orange zest and some 10 g of honey.

NB.

If you prefer, you can make this dessert using lemon.
