Sole with thyme
Instructions
This is a very simple, easy to perform.
Eviscerated the soles, remove the skin, wash and boil in lightly salted water.
Drain, place on serving platter, season with a little spilled oil, sprinkle with a few drops of lemon.
Separate the leaves from the thyme sprigs, wash and dry them, put into a bowl three spoonfuls, add a pinch of pepper and salt.
Stirring, pour flush oil until the mixture is smooth.
Sprinkle on the soles.
Keep in a cool place.
Accompanying wines: Gavi, Bolgheri DOC Bianco DOC, Gravina DOC.

- 4 soles
- Few drops of lemon juice
- Thyme
- Olive oil
- 1 pinch of salt
- 1 pinch of white pepper
