Stollen
Instructions
Mix flour and baking powder on the table.
Make a hollow in the middle and pour in sugar, eggs, spices and salt.
With the flour to form a mush and above it put the cold butter cut into pieces, lard, cottage cheese, candied fruit, raisins and chopped almonds.
Crush everything together and knead quickly.
If the dough is sticky, add a little flour.
Give the typical form of the stollen and put the oven on greased and floured.
Cook for about 75 minutes at medium temperature (150-175 degrees).
After baking spread with melted butter (50 g) and sprinkle with icing sugar (50 g).
Ingredients and dosing for 4 persons
- 500 g of flour
- 1 sachet of yeast
- 200 g of sugar
- 1 sachet of vanilla sugar
- 1 pinch of salt
- 4 drops of aroma of bitter almonds
- 4 drops of lemon aroma
- 1 ampoule of rum aroma
- 2 pinches of ground cardamom
- 2 pinches of nutmeg
- 2 eggs
- 125 g of butter (or margarine)
- 50 g of lard
- 250 g of ricotta
- 40 g of candies
- 125 g of dark raisins (korinten)
- 125 g of sultanas chiara (rosinen)
- 125 g almond of (or hazelnuts)
