Persian morsels in lettuce citrus
Instructions
Blanch the lettuce and stuff them with perch fillets topped with olive oil, salt and pepper; roll up like cannoli and cook them in a pan with oil, celery and chopped carrot to the knife.
Flavour when cooked with Peel clementines and deglaze the cooking with their juice.
Reduce the sauce and rolls napparvi.

- 4 leaves of lettuce salad
- 2 clementines
- 1 costa of celery
- 1 carrot
- Olive oil
- Salt
