The shrimp appetizers
Instructions
Take the shrimp, wash them in their shells in salted water and introduceteli, with a pinch of salt until, in one of those special bags for cooking.
Seal the bag and let them boil for 10 minutes: the fresh shrimp, for 20 minutes frozen ones.
Then clean the lettuce heads, putting aside the leaves.
Then prepare this sauce: melt the butter, put the egg yolks in a bowl with water and place over very low heat, beating them at once with the whip and then stirring in a little at a time, the previously melted butter.
As soon as the mixture will be condensed, add a tablespoon of lemon juice and chopped parsley fine along with Sage and basil.
Then add salt and pepper the sauce.
Boiled shrimp to remove the shell and sprinkle with the sauce, then infilateli the appropriate toothpick alternating with salad leaves.
Put the sauce in a bowl and bring this to the table.

- 600 g of shrimp
- 4 small heads of red salad
- 40 g of butter or margarine
- 2 egg yolks
- 1 tablespoon of lemon juice
- 1 bunch of parsley
- Chopped sage
- Chopped basil
- Pepper
- Salt
