Meat sauce alla genovese
Instructions
Chop vegetables and fry them with oil in an earthenware dish.
Flour and roast meat, wetting it with wine.
Dilute the sauce in broth and add the meat.
Add salt and cook over low heat.
Cook for at least 2 hours at low heat, adding more broth if necessary.
Ingredients and dosing for 4 persons
- 1 piece of beef from 500 g
- 1 medium onion
- 1 carrot
- 1 stalk of celery
- 1 glass of olive oil extra virgin
- Little of flour
- 1 glass red wine
- 1 tablespoon of tomato sauce
- Little of broth
- Salt
