Instructions
Saute the onion in the oil the carrot and celery and then add the chopped tomatoes, salt and simmer for 2 hours.
Put milk in a saucepan and add water and cook the rice and salt.
When everything is cooked, pour the rice on a plate and season with butter, grated Parmesan and 3 eggs.
To prepare the pastry put the flour in the volcano and in the Center, place melted butter, a pinch of salt and a little milk.
Knead well and let two thin sheets.
Grease a mould, spolveratelo with flour and foderatelo with a disk of dough; above put a layer of rice and over again add the sauce and rice.
Cover with another puff, wet with egg white and brush the surface of the timbale with egg yolk and put in oven for 30 minutes.
Served with melted butter.
