Instructions

It is a typical dessert of the Carnival.

Boil 1/4 litre salted water with butter.

Pour in one fell swoop the flour and cook for 10 minutes, without ever stopping to mix.

Remove from heat, let cool, then stir the eggs, alternating the egg yolk to albumen mounted until stiff.

Knead the dough with the whip and prepare a pan fried with plenty of oil from.

When it starts to smoke, take a small spoonfuls of dough and cook the tortelli removing them constantly with a fork, causing them to turn on themselves: at the end will have to double their volume.

Serve dusted with icing sugar, preferably hot.
