Instructions
Flour the meat, tie it and Brown with 40 g of butter, 1 peeled garlic clove, Sage and Rosemary.
Remove the meat, discarding garlic and spices and add to broth 1 onion, chopped carrot, celery, Sage, Rosemary, all washed away.
FRY, then put the meat in the bowl, wet with wine and broth.
