Instructions
01031 CAULIFLOWER FLAN INGREDIENTS for 4 PEOPLE 1 cauliflower; 75 g butter; 3 egg yolks; pepper and nutmeg; HOLLANDAISE SAUCE: 100 g butter; 3 egg yolks; 1 tablespoon of lemon juice; salt and white pepper.
Clean cauliflower, split it into sprigs and cook in salted water for 20 minutes.
Drain and place in a blender with butter and egg yolks.
You have to get a cream finish.
Pour this mixture in a buttered Cake mould, bake in the oven, Bain-Marie, until the dough is well linked (40 minutes); Turn on a dish the cauliflower flan and serve with Hollandaise sauce.
Sauce: In a saucepan, put a tablespoon of water and lemon juice, egg yolks, mix well and Cook, Bain-Marie.
Add the butter chunks, stirring continuously, just enough to get a creamy sauce.
