Spaghetti with lobster (Spaghetti all'astice)
Instructions
Boil for 5 minutes a lobster in salted water, perfumed with a clove of garlic and seared tomato, peeled and crushed.
Meanwhile, FRY in a pan with a few tablespoons of olive oil, a clove of garlic.
Add the boiled lobster meat and cut into pieces.
FRY stirring and wet with brandy.
Add some chopped parsley, 2 teaspoons tomato paste dissolved in a little warm water, salt, and pepper to taste.
FRY lobster for an additional 5 minutes. throw the spaghetti in salted water and take them halfway through the cooking.
Drain well, pour into the pan with the lobster and complete cooking.
Belong to the Istrian tradition even the spaghetti alla busara, rather than with the lobster, with Sadat, cooked with fresh tomato sauce and wet with Juniper brandy.
In this case the spaghetti cooking is completed in a hot oven for 20 minutes, after they have been sprinkled with bread crumbs, a carrot flakes, crushed tomato, garlic and chopped onion.
