Fritto Misto di Mare
Instructions
Wash and dry the shrimps and squid rings. 70 g flour mixed with olive oil, add two tablespoons of water and stir until you have a smooth batter.
Whip the egg whites until foamy and firmly embed to the batter; Soak squid.
Heat oil in a skillet; flour the shrimps then scuoteteli to remove excess flour, dip them in the hot oil, turning them until they half-cooked; remove them from the oil with a skimmer and put them to drain on kitchen paper.
Squid rings raised by the batter, let them drain slightly and pour in the oil. FRY for 3 minutes, voltandoli half-cooked, then remove them with a skimmer, drain them on a paper towel, add salt and serve hot.
