Instructions
Cut the bacon into slices not too thin and cut the strips 2 cm wide.
Put them in a cast iron pan and fry over a low heat until they color.
Throw in the onion and pepper; to imbiondimento of the onion, pour a glass of wine, keepn add the tomatoes, season with salt, pepper and mix for 8-10 minutes.
While preparing the sauce, toss the bucatini into a pot with plenty of boiling salted water, and put al dente; put them in a pot and cover them with half of the cheese and the sauce.
Stir and serve with grated pecorino and remaining sauce aside.
Ingredients and dosing for 4 persons
- 400 g of type pasta bucatini sliced
- 100 g of grated pecorino cheese
- 200 g of bacon lean pork cut into large pieces
- 5 tomatoes (very dry pulp and cut into fine threads)
- 1 glass dry white wine
- 2 tablespoons of olive oil
- 1/4 finely chopped onion
- 1 piece of chili
