Private artichokes of stems, which will keep aside, and the toughest outer leaves, cut them in half to remove the plugs, then divide them into two, remove any hay and cut again in half.
Peel the stems and reduce it into pieces about 3-4 inches.
Gradually immerse both the cloves and artichoke stalks in a bowl full of water acidulated with lemon juice.
Do heat three tablespoons of olive oil in a saucepan.
