Fried mussels (2)
Instructions
Carefully scrape the mussels, free them from the hairy tuft, wash them and make them open to heat.
Once open extract the muscles and put them to dry on a kitchen towel.
Prepare the batter intridendo the flour first with water and then with the wine, and finally with the clear just beaten with a whip.
Add salt and allow to stand moderately for at least half an hour.
Shortly before going to the table to dip into the batter and FRY in the hot oil, pescandoli with a spoon two or three at a time.
Once the fries are golden brown, remove them from the oil and place them on a piece of paper straw so that lose excess oil, give it a dash of salt and serve.
Ingredients and dosing for 8 persons
- 2000 g of great mussels
- 250 g of flour
- 3 egg whites
- 1 teaspoon of salt
- 1/2 cup of water
- 1/2 cup of white wine
- Olive oil for frying
