Stuffed zucchini flowers and deep-fried
Instructions
Prepare the batter by mixing the ingredients above (only the egg yolk), diluted by adding lots of warm water how much it takes to obtain a homogeneous compound and not too dense.
Let it stand for half an hour and then join the mounted white until stiff.
Open gently the calyx of the flowers, remove the pistil, rinse quickly under cold water and fill each with a stick and a half mozzarella anchovy fillet.
Close opening with a toothpick.
Dip a flower at a time into the batter and FRY in hot oil.
Retire it just become Golden.
Ingredients and dosing for 4 persons
- 12 zucchini flowers
- 1 mozzarella small
- 6 anchovy fillets
- Olive oil
- For the batter:
- 100 g of flour
- 1 egg
- 1/2 cup of dry white wine
- 2 tablespoons of olive oil
- Water
- Salt
