Fregula stufada
Instructions
Boil the semolina in meat broth until will become soft (20 minutes).
Meanwhile, fry a chopped onion and plenty of parsley.
Drain the heat from cooking broth and place it in a baking pan greased with lard, alternating layers of flour to the sauce sprinkled with pecorino.
Put the Pan in the oven and cook for another 20 minutes.

- 500 g of fregula (sardinian semolina)
- 120 g of seasoned pecorino cheese
- 50 g of lard
- 1 onion
- Parsley
- Meat broth
