Heat half the butter with the oil, then add the garlic and mushrooms shortly after.
Once thawed, salt and pepper and cook by reducing the water.
Combine the lemon juice, flour, the rest of the butter and gradually add the stock, stirring.
Mix the egg yolks with the cream and combine them with mushrooms.

Sprinkle with chopped parsley and serve.
