Mushroom gratin
Instructions
Clean and chop the mushrooms thinly and arrange on a greased plate previously sprinkled with small cubes of celery and carrots.
Prepare the sauce emulsifying the egg yolks with the anchovies, lemon juice, olive oil, melted butter and water until you obtain a well tied and not too thick, add the parsley, salt and pepper.
Cover the mushrooms, go in the oven for a few minutes at 200 degrees and serve immediately.

- 4 average size mushrooms
- 2 egg yolks
- 2 anchovy fillets, chopped
- 1/2 lemon (juice)
- 4 tablespoons of olive oil
- 20 g of melted butter
- 2 tablespoons of water
- 1 tablespoon of chopped parsley
- Salt
- Pepper
