Fusilli with zucchini flowers and catmint
Instructions
In a large aluminum pan put a little oil with a knob of butter and fry a small onion.
Meanwhile cut the zucchini slices and add them into the Pan when onion begins to be blonde.
Let it fry a little, then add Zucchini Flowers cut into strips and deprived of pistil then continue to fry the whole thing.
Season with salt, sprinkle with ground black pepper, half a tablespoon of flour and add a sprig of fresh catmint.
Add quite a ladle of pasta water already in baking, cover and let it reduce until the sauce is neither too dry nor too fluid.
As soon as the pasta is cooked, drain and pour into the Pan, stir with the medium flame and serve.
Note: Add the pasta cooking water a little at a time, to cook courgettes, allows to obtain a sauce with the consistency of a cream which replaces cremina and dampens the flavor of the zucchini.

- 350 g of type pasta fusilli
- 8 zucchinette with the flower
- 1/2 tablespoon of flour
- == 1 small onion
- 1 sprig of fresh catmint
- 1 walnut butter
- Olive oil extra virgin
- Salt
- Minced 1 of black pepper in grains
