Instructions
Peel the beans, wash and cook them al dente in salted water with fennel seeds.
Cut into julienne carrots, radishes and cucumber slice, dice the flesh of the melon: put everything into a large bowl and add the chopped green beans.
Chop Mint with your hands and put it in a bowl with lemon juice, a pinch of salt and 3 tablespoons oil.
Emulsify the sauce and pour it over the salad, stir and serve.
