Beet Salad (Insalata Mista di Barbabietole)
Instructions
Boil the potatoes, cut them into rings; slice beets; cut the tomatoes into wedges; hard boil the eggs.
Arrange the vegetables so prepared in the middle of a salad bowl; complete with two hard-boiled eggs into wedges, diced cheese; surrounded with the boiled beans.
Mix the capers with cucumbers, boiled egg, parsley, salt, pepper, a tablespoon of vinegar and enough oil to get a thick sauce that you serve.

- 2 beets
- 300 g of potatoes
- 150 g of green beans
- 1 tomato
- 20 g of capers
- 3 pickles
- 3 hardboiled eggs
- Parsley
- 100 g of gruyere cheese
- Olive oil
- 1 tablespoon of wine vinegar
- Salt
- Pepper
