Soup with artichokes (2)
Instructions
Clean the artichokes, then cut them into thin wedges and dip them in water acidulated with lemon juice.
Peel and chop the garlic; Roast in 1 saucepan with oil and 20 g of butter, then add the artichokes, salt, and pepper and cook for 5 minutes.
Wet with 1 ladle of broth and cook covered for 10 minutes more.
Then add the remaining broth, bring to a boil and cook the pastina.
Finally, add the remaining butter and 2 handfuls of grated Parmesan cheese.

- 4 artichokes
- 200 g of type pasta pastina gramigna
- 2 cloves of garlic
- 40 g of butter
- Olive oil
- 125 cl of broth
- Grated parmesan cheese
- 1 lemon
