Triestina soup
Instructions
To soften the butter and work it in with cream 75 g Parmesan, salt, pepper and grated nutmeg.
Add 1 egg and 1 tbsp of breadcrumbs and continue to stir vigorously.
Combine 1 egg and 1 tablespoon breadcrumbs at a time.
When the mixture is homogeneous form balls and throw them into boiling broth.
Cook for a few minutes and serve with the remaining Parmesan.

- 4 eggs
- 150 cl of meat broth
- 70 g of butter
- 100 g of grated parmesan cheese
- 4 tablespoons of breadcrumbs
- 1 rub of nutmeg
- Salt
- Pepper
