Instructions
Clean the skin and nerves liver and Brown in butter.
Remove from heat, soak the bread in the broth and blend the liver and bread along with the other ingredients.

Serve with slices of toasted bread or crackers and even butter.
Ingredients and dosing for 4 persons
- 150 g of calf liver
- 40 g of butter
- 1 slice of bread without crust
- 1/2 tablespoon of wine vinegar
- 1/2 tablespoon of pickled capers
- 1/4 lemon (juice)
- 2 anchovy fillets in olive oil
- Salt
