Peperonata (4)
Instructions
Wash the peppers, cut into strips and remove seeds.
To dry the onion in 1/2 cup of oil in a pan covered.
Peel the tomatoes and mash.
Pour a little hot water in the Pan and add the peppers, tomatoes, garlic, salt and pepper.
Bake the pan covered to peperonata and over medium heat until the oil is completely absorbed by vegetables.
When cooked, sprinkle with chopped Basil.

- 4 large peppers
- 1 onion
- 1 clove of garlic
- 6 sauce tomatoes
- Basil
- 1/2 cup of olive oil
- Salt
- Pepper
