Cheese pizza
Instructions
Coarsely grate half cheese and cut the other half into cubes very small.
In a bowl beat the eggs with the Parmesan, grated pecorino and into cubes and let stand the mixture for an hour covered with a towel.
Put the dough on work surface, add the flour and a pinch of salt, knead for 5 minutes, then pour in some spoonfuls of beaten eggs with cheese.
Work with your fingertips so that they are absorbed by the dough before adding in spoonfuls, the rest.
Knead the mixture is uniform and arrange them in a large bowl; cover with a towel and let rise in warm place for 2 hours.
Grease the pan with lard, add the pasta, cover it with a towel and let rise in warm place for another hour.
Then place in the oven already warm for 40 minutes.
Served on a hot plate already sliced.

- 180 g of purchased bread dough ready
- 50 g of grated parmesan cheese
- 150 g of fresh pecorino cheese (150 g pieces)
- 100 g of flour
- 3 eggs
- 1/2 tablespoon of lard
- Salt
