Pizza with eggplant
Instructions
Derive from the dough 4 discs.
Thin slice the aubergines, scamorza and tomatoes.
Put the pizza on a griddle greased with oil and sprinkle the tomatoes, eggplants, scamorza and some onion rings.
Add salt, pepper, garnish with a few leaves of basil, drizzle with a little oil and bake in the oven at 220 degrees for 25 minutes.

- 2 boiled eggplant
- 6 perini tomatoes
- Some leaves of basil
- == 1 small onion
- Olive oil
- Salt
