Chicken with Peppers (Pollo Coi Peperoni)
Instructions
Clean the chicken, fiammeggiatelo, wash and cut into pieces.

Add the finely chopped onion and let it dry, then wet with wine.
Lower the heat and let the wine evaporate by half.
After five or six minutes add the tomatoes previously blanched in boiling water, peeled and chopped.
Add salt and pepper.
Wash the peppers, cut them in half, remove the seeds and filaments and cut them into thin strips instead.
Add the peppers to the chicken and continue cooking for 40 minutes, stirring occasionally.
During cooking if necessary, soak the meat with a little hot broth.

- 300 g of ripe tomatoes

- 25 cl of dry white wine
