Dissolve 50 g of butter, then add the chopped carrots, a pinch of salt, a pinch of sugar and cover with water.
Bring to a boil and cook for 20 minutes and focus in covered container.
When cooked, drain the carrots and pass them through a sieve.
Combine the cream, the remaining butter and chopped parsley.
Heat the mash and must be flushed with lemon juice.
Serve.
