Spaghetti with Zucchini (2)
Instructions
Peel the squash and cut into rings.
Brown them in a pan with oil and garlic peeled for about 20 minutes.
In a bowl beat the eggs and egg yolk, add 4 tablespoons of cheese and mix well.
Boil the spaghetti, drain and pour into the bowl with the eggs, add the courgettes and a handful of chopped parsley.
Stir quickly and serve with more grated pecorino cheese.

- 400 g of type pasta spaghetti
- 3 zucchini
- 3 eggs
- 1 clove of garlic
- 1 egg yolk
- Grated pecorino cheese
- Parsley
- Salt
