Chicken liver sauce
Instructions
Saute chopped onion in a pan with a little olive oil and butter and a sprig of Rosemary.
Add the chicken livers, cut into thin slices and cook basting with a little broth.
Then pour the fresh tomatoes sprouts and seeds into chunks or peeled.
Cook over moderate heat until the sauce will have taken a good consistency.
Pour over hot tajarin.
The classic sauce of noodles is to meat and tomato sauce, but this with chicken livers is the absolute best.
Ingredients and dosing for 8 persons
- 6 chicken livers
- 1 medium onion
- Olive oil
- 1 walnut butter
- 1 sprig of rosemary
- 4 fresh tomatoes (or peeled)
- 1/2 cup of broth
- Salt
