The pistachio cake
Instructions
Private pistachios, sfregandoli the skin in his hands, then mince finely.
Beat the eggs in a bowl with sugar, using a whisk, until mixture is fluffy.
Add the olive oil, milk and a pinch of salt, mix with a wooden spoon, then add the chopped pistachios, flour and baking powder.
Knead the mixture for about 10 minutes, so that it is swollen and homogeneous, then transfer it in a pan greased and floured round, and livellatene the surface.
Bake the cake in a preheated oven (180 degrees) for about 40 minutes.
After this time, remove the cake from the oven, dessert, turn out onto a serving dish, let cool, then cover it with the apricot jam, sprinkle with icing sugar and serve.

- 400 g of flour
- 200 g of sugar
- 2 tablespoons of icing sugar
- 4 eggs
- 1 sachet of yeast
- 1 pinch of salt
- Butter for the pan
- Flour for the baking pan
- 80 g of shelled pistachios
- 1 glass of milk
- 100 G = = apricot jam
- 1 glass of olive oil
