Potato Soup (Zuppa di Patate)
Instructions
Chop the bacon and season both in a pan with two tablespoons of olive oil.
Add the potatoes and the onion cut into thin slices, grated carrots.
Stir and let it cook.
Add salt and pepper.
Pour a litre and a half cold water and bring to a boil.
Reduce the heat and simmer for an hour or more because the mixture thickens.
Serve with chopped parsley.

- 4 slices of pancetta
- 6 potatoes
- 2 baby carrots
- 1 onion
- Chopped parsley
- 2 tablespoons of olive oil
- Salt
- Pepper
