Stuffed capon
Instructions
Pound finely chopped 300 g of breadsticks and mix them with 3 tablespoons grated Parmesan cheese, 1 pinch of cinnamon 1 socket, nutmeg, salt, pepper, 1 pinch of dried Basil.
Moisten with a little milk, kneading and introduce this stuffed inside a young man of about 1000 g Capon, washed and cleaned.
Sew the Capon and lessarlo in plenty of salted water and flavored with onions, carrots and celery.
Serve hot with fruit mostarda.
