Instructions

This is a typical Apulian recipe excellent to recycle stale bread and to prepare with very little expense a second tasty and nutritious.

With the doses indicated in the list of ingredients you can make about 12-14 medium-sized meatballs.

In a bowl, breaking eggs and whisk them gently with a fork. Add the grated cheese and crumbled bread crumbs with fingers or pureed into a robot, parsley, garlic, salt and pepper. Mix well until mixture is not too hard, if necessary add a little more cheese or otherwise, if it is too dry, another egg.

Form with the help of hands meatballs taking the compound and working a bit to give the desired shape and size (using an ice cream scoop shape obtained is perfect); FRY in hot oil until golden brown on both sides.

Let them dry on a paper towel and enjoy your hot; cold also are not bad at all ... If you are so fortunate to do advance to the next meal!

Ingredients and dosing for 4 persons

  • 4 eggs
  • breadcrumbs-half a loaf of bread from Apulia (kilo and possibly at home)
  • 2 or 3 large handfuls of grated cheese (grana padano or-according to the traditional recipe-pecorino, or a mixture of the two)
  • parsley
  • a bit of garlic (optional)
  • salt and pepper
  • olive oil for frying
