Leave the chickpeas to soak overnight and then put them to cook in salted water for 2 hours, or until they become soft but not overcooked.
Meanwhile, remove the head to anchovies, put them in a pan with olive oil and chopped parsley.
Mix well and cook until it dissolves.
Remove the water with chickpeas and put them in a salad bowl stirring over anchovy sauce and two pinches of paprika.
