Instructions
Clean the baby octopus, flush them and throw them for 15 minutes in boiling salted water acidulated with vinegar 2 tbsp.
Let them cool in the Pan, then drain and pat dry.
Cut into pieces the tentacles and body washers of moscardini.
Place them in a tray.
Apart from beating 5 tablespoons of oil with the lemon juice, salt and pepper and chopped garlic.
Pour the sauce on moscardini, add a handful of chopped parsley, stir and let stand for 1 hour before serving.

- 750 g of moscardini
- 1/2 clove of garlic
- 1 lemon
- Parsley
- Olive oil
- Wine vinegar
- Salt
- Pepper
