Spanish pancakes
Instructions
Drain the apricots and place them in a dish.
Spolverizzarle with sugar, wet them with brandy and let rest 1 hour.
Beat the egg yolks with milk, flour, 1 teaspoon of olive oil, the lemon zest and a pinch of salt.
Add to the batter 1 egg white snow mounted soda.
Drain the apricots and pass them into the batter.
Fry them in plenty of hot oil for about 5 minutes and serve hot and sprinkle with icing sugar.

- 500 g of apricots in syrup
- 100 g of flour
- 2 eggs
- 1 lemon
- Sugar
- Brandy
