Beets with anchovies
Instructions
Peel the beets, cut into slices and then into cubes.
Collect them in a salad bowl, sprinkle with parsley and chopped garlic.
In a saucepan heat four tablespoons of olive oil mixed with a vinegar and water mix the anchovies and de-boned.
Salt.
Emulsified and pour over beets.
Mix well, let stand and serve.

- 600 g of cooked beets
- 4 anchovies
- 1/2 clove of garlic
- Parsley
- 1 tablespoon of wine vinegar
- 4 tablespoons of olive oil
