The southern turnovers
Instructions
Pour the flour and put in 100 g of lard, 1 teaspoon salt and 2 tablespoons of warm water.
Knead the ingredients with your fingertips to form a smooth paste and compact, yet by adding a little water.
Form a ball and let it sit for at least an hour.
Fry the ham over low heat until the fat has melted.
Pour it into a bowl, allow to cool then add the diced mozzarella, parmesan, provolone, parsley, eggs, flavored with pepper and nutmeg and mix well all ingredients.
Roll out the pastry to a thickness of about 3 mm and cut out circles with a diameter of 8-10 cm.
Place in the center of each circle a little pile of filling, then fold the dough forming half-moons and sealing the edges well.
In a skillet, heat lard thoroughly and, when hot, friggetevi the turnovers, a little at a time until they become Golden well.
Drain, drain them on absorbent paper and serve at once.

- 400 g of flour
- 200 g of mozzarella di bufala
- 70 g of grated provolone cheese
- 30 g of grated parmesan cheese
- 60 g of chopped cooked ham
- 2 eggs
- 1 tablespoon of chopped parsley
- 100 g of lard
- Nutmeg
- Pepper
- 1 teaspoon of salt
