Sweet and Sour Peppers (Peperoni in Agrodolce)
Instructions
Cut the peppers into strips and onion into rings, put everything in a large pan with olive oil and salt over medium heat and simmer with the lid (better than glass so you can see), stirring occasionally so as not to make them stick.
When tender add the tomato sauce and simmer again for let it dry a bit.
When the sauce is cooked, add the vinegar and sugar (eye, I'd say half a cup of vinegar and two tablespoons of sugar), let it soften a bit and switch off, you need cold.
