Piccadolce skewers
Instructions
Beat the eggs with the Parmesan, parsley, potatoes and add salt.
You heat a tablespoon of oil in a pan and prepare an omelette rather thick.
Let it cool, then cut it into cubes.
Cut the tomatoes into wedges and cucumber slices.
Prepare skewers by placing on long appetizers, fried cubes alternated with the cucumber slices, cheese slices and tomato wedges and finishing with an olive.

- 4 eggs
- 2 boiled potatoes
- 4 piccadolce cheese slices
- 2 tablespoons of grated parmesan cheese
- Parsley
- 1 cucumber
- 2 tomatoes
- Pitted green olives
- Salt
- Olive oil
