Artichoke Sauce (Sugo di Carciofi)
Instructions
Clean the artichokes.
Remove tips and hard leaves and cut them into slices.
Soak them in salted water.
Chop the vegetables and let them FRY in oil in which have been dissolved the anchovy fillets.
Add the artichokes and wet with wine.
Let it evaporate and add a little hot water and possibly salt, leading to cooking.

- 4 artichokes
- 2 salted anchovies
- 1 onion
- 1 sprig of parsley
- 1 clove of garlic
- Little of white wine
