Anchovy pie
Instructions
Boil the potatoes in salted water, drain and thickly without removing the husk.
Wash the anchovies, dry cleaned and de-boned.
Wash tomatoes, cut them in slices.
Grease a baking dish, cover bottom with a layer of potatoes; continue with one of anchovies and tomatoes; Repeat until you run out of ingredients.
In alternate layers every time you toss with a little oil and a pinch of thyme.
Cover with aluminum foil, bake for 30 minutes at 200 degrees.
Ten minutes before it's done cooking remove the aluminum.
