Instructions
Untie roast and open slightly the meat with your fingers.
Finely chop 1/3 set of aromas and mix them with salt and pepper.
Spread the mixture on the inside of the piece of meat and close.
Turn on the oven to 240 degrees.
Wrap the roast with Bacon and tie it well again with kitchen Twine.
Pour half the oil the bottom of a baking dish and cover with slices of onion.
Arrange half of the remaining spices on onions and lay over the meat.
Sprayed with the remaining oil, add salt and put butter on the meat into chunks.
Spread the rest of the spices and bake.
Let Cook for 30 minutes, then wet with wine and lowered the temperature to 190 degrees.
Continue baking for an hour and a half, adding a little water if necessary.
Serve with boiled potatoes and baked in the same Pan roast.

- 1 roast 1200 g cup
- 150 g of bacon sliced
- 1 onion
- 20 g of butter
- A Few Sprigs Thyme =
- Sage and rosemary
- 4 tablespoons of olive oil
- 15 cl of white wine
- Salt
- Pepper
